Strawberry lemonade is a refreshing drink to enjoy in the spring and summer months. I’ve written about my love affair with lemonade before, and the strawberry variety is right up there in terms of greatness. This is a common twist on lemonade I haven’t seen much of outside of the U.S., although Norwegian strawberries are perfect for this recipe. If you can, keep all of your ingredients chilled in the fridge until just before serving as you want to serve this drink foamy right out of the blender. As it sits in the glass, it will separate, which makes it look that more impressive.
- 350g (1 ¾ cups) sugar
- 2 liters (8 cups) water
- 350 ml (1 ½ cups) freshly squeezed lemon juice (no seeds)
- 10 strawberries, hulled
- To make simple syrup, combine the sugar and 250 ml/1 cup of the water in a small saucepan. Bring to a gentle boil and stir to dissolve sugar. Allow to cool to room temperature, then cover and refrigerate until chilled.
- Add chilled simple syrup, lemon juice, strawberries and 1 liter/4 cups water to a blender. Blend until smooth then add to a pitcher with the remaining water.
- Serve and enjoy!
