350 ml (1 ½ cups) freshly squeezed lemon juice (no seeds)
10 strawberries, hulled
To make simple syrup, combine the sugar and 250 ml/1 cup of the water in a small saucepan. Bring to a gentle boil and stir to dissolve sugar. Allow to cool to room temperature, then cover and refrigerate until chilled.
Add chilled simple syrup, lemon juice, strawberries and 1 liter/4 cups water to a blender. Blend until smooth then add to a pitcher with the remaining water.
Serve and enjoy!
If you can, keep all of your ingredients chilled in the fridge until just before serving as you want to serve this drink foamy right out of the blender. As it sits in the glass, it will separate, which makes it look that more impressive.
