A nice cool glass of lemonade in the spring or summer is one of the pleasures in life i enjoy most. Lemonade is a great drink to serve at BBQs, spring and summer parties or on a warm day because the tartness of the lemon and the sweetness from the simple syrup balance out into blissful refreshment. Although it goes without saying, be sure to use freshly squeezed lemons for this recipe. It will take a bit of time to squeeze them all, but the flavor pay off is well worth it. Also, as this recipe uses simple syrup, a syrup which combines equal parts sugar and water before being diluted into drink recipes, you won’t get that yucky “all the sweetness is at the bottom” phenomenon.
- 350g (1 ¾ cups) sugar
- 2 liters (8 cups) water
- 350 ml (1 ½ cups) freshly squeezed lemon juice (no seeds)
- To make simple syrup, combine the sugar and 250 ml/1 cup of the water in a small saucepan. Bring to a gentle boil and stir to dissolve sugar. Allow to cool to room temperature, then cover and refrigerate until chilled.
- In a pitcher, stir together chilled simple syrup, lemon juice and remaining water.
- Serve and enjoy!
