An ex-chef friend of mine showed me how to make blanched almonds aka how to take the skins off almonds. I never really thought about it, I just kept buying raw almonds and thought “fuggedaboutit”.
Making blanched almonds is easy. Simply boil water (not much, but a bit more than just covering them-we used the water for the rice and just took the almonds out before we but the rice in), throw the raw almonds in, wait ca. 5 mins until the skins begin to plump, then take the almonds out the water. Let the almonds cool a bit, then “pop” the white almond out of the brown skin. You can also peel them off if you wanted to be elegant about it of course (not that I do that but you can).
